This recipe for peanut butter cookies is the perfect combination of soft in the middle and crispy on the outside.
To me that is the perfect peanut butter cookie.
I don’t like a super thin cookie, and I don’t like it so chewy that my jaw starts to hurt. 🙂
Plus these cookies are delicious!
The recipe makes about 4 dozen cookies. I like to roll the dough and press with a fork, and then freeze.
That way I can pull out a dough and make a pan whenever I need to.

Ingredients for Peanut Butter Cookies:
- 1 cup softened butter (2 sticks)
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 1 cup peanut butter
- 2 eggs
- 1 tsp. vanilla
- 3 cups of flour
- 1 tsp. baking soda
- 1/2 tsp. salt

Directions:
Preheat oven to 375°.
Cream together the butter, granulated sugar, and brown sugar until fully incorporated.
Beat in peanut butter, eggs, and vanilla.
Add flour, baking soda, and salt. Stir until well blended.
Roll dough into 1 inch balls and place on a greased cookie sheet.
Using a fork, press into the dough balls twice creating criss-cross indentations.
Bake at 375° for 10 minutes.
