My kids love muffins for breakfast. I like that I can squeeze in a fruit or even vegetable in muffins.
Usually muffins feel like cupcakes, but these muffins are only a little sweet.
For a balanced meal, pair the muffins with greek yogurt and berries or breakfast meats.

Ingredients
1 1/2 cups flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp cinnamon
1 egg
1/2 cup of milk
1/4 cup of applesauce
1 cup of diced apples
butter
Directions:
Preheat oven to 400° and grease muffin pan.
NOTE: You will not bake the muffins this hot for the whole time. But starting at 400° for the first 10 minutes will cause the muffins to puff up.
Then you’ll turn down the temperature for the last 8 minutes.
Mix dry ingredients: flour, sugar, baking powder, sugar, cinnamon.
Add wet ingredients: egg, milk, applesauce. Stir all together.
Stir in diced apples.

Fill 12 muffin cups about 2/3 full of muffin batter.
Bake for 10 minutes at 400°. The muffins are not done!
Turn down the temperature to 350° and bake for 8 minutes.
When the muffins are done, use the end of a stick of butter to cover tops of muffins with melted butter.

A slightly sweet apple cinnamon muffin recipe.

Use any flavor of apple you have on hand.
